Only 22 more days until I head back to PA! Time has been flying by, and I hope the next few weeks move just as quickly.
We're preparing to host an artist who is coming in to do a 2 week project with all of the kids. I'm really excited to meet her and glad I had the opportunity to write the grant that allowed this project to happen! Keep an eye out on the school page and here for some pictures!
Our high schoolers returned from their trip to NYC and Washington DC this week. A HUGE thank you to everyone who bought shirts and hoodies to support them! You helped make this an experience of a lifetime! If you missed updates, there are tons of pictures posted on the school FB page.

Although it was a fun trip, everyone was glad to be back, and we were glad to have them back! It's hard running a school with only 2-3 teachers! (the first week they were gone, a bear showed up! Oh, and the school bus had a slight wheel incident...)
The weather here has been so variable. It was beautiful the last few weeks of March, but now it seems like we're back to rain and fog. I'm hoping that the rain brings green grass and maybe some flowers? The birds are starting to come back too- ravens, seagulls, owls, and others I can't identify.

With all of the commotion and chaos, this weekend was a time for relaxation and some much needed cooking therapy. Perhaps I should rename the blog? Someone suggested "The Alaskan Gourmet". Catchy, but I don't think I'll be changing the name anytime soon.
I haven't been able to bake much, since I ran out of flour (20lbs!) But thankfully was able to borrow some flour to make these pizzas.
I "accidentally" made too much dough and ended up with 3 pizzas. Well in my defense, the recipe said it made 1 medium pizza...so me, thinking that wouldn't be enough, doubled it.
I had some fresh spinach, so I made spinach pizza with a garlic white sauce. It turned out really good!
I also tried my hand again at homemade ricotta cheese, and had a ricotta spinach pizza. That one was my favorite! So creamy and delicious. And much better than store-bought ricotta. (not that I had any anyway!) It was pretty easy and something I wouldn't mind trying again.
